为探明雌雄细鳞斜颌鲴不同部位的蛋白质营养价值,测定雌雄细鳞斜颌鲴中脑、眼、性腺、鳔、肌肉及皮的水分、粗蛋白等基本营养成分,对各部位的氨基酸含量进行比较分析与评价。结果表明:1)鳔和皮中粗蛋白质量分数较高,肌肉次之,眼最低(♀/♂,8.48%/7.37%),雌雄鱼各部位粗蛋白质量分数,除雌性性腺极显著高于雄性(P<0.01)外,其他部位无显著差异(P >0.05)。2)6部位均测出18种氨基酸;3)6部位总氨基酸含量大小依次如下:雌性为鳔、皮、卵巢、肌肉、脑、眼,雄性为皮、鳔、肌肉、精巢、脑、眼;4)在性腺的氨基酸组成中,雌细鳞斜颌鲴氨基酸总量(20.70%)高于雄性(9.11%),差异极显著(P<0.01);5)雌雄的眼、鳔、肌肉、皮第一限制性氨基酸均为缬氨酸,雌鱼脑的第一限制性氨基酸为苏氨酸,雄鱼脑和雌雄性腺第一限制性氨基酸为(蛋氨酸+胱氨酸);6)雌雄脑的必需氨基酸指数(EAAI)在6部位中最高,分别为82.13和80.91,肌肉的EAAI分别为72.89和71.80,皮的EAAI最低,分别为39.07和38.29。雌雄细鳞斜颌鲴6部位均含有丰富的氨基酸,其中雌性营养价值较雄性高。

위탐명자웅세린사합고불동부위적단백질영양개치,측정자웅세린사합고중뇌、안、성선、표、기육급피적수분、조단백등기본영양성분,대각부위적안기산함량진행비교분석여평개。결과표명:1)표화피중조단백질량분수교고,기육차지,안최저(♀/♂,8.48%/7.37%),자웅어각부위조단백질량분수,제자성성선겁현저고우웅성(P<0.01)외,기타부위무현저차이(P >0.05)。2)6부위균측출18충안기산;3)6부위총안기산함량대소의차여하:자성위표、피、란소、기육、뇌、안,웅성위피、표、기육、정소、뇌、안;4)재성선적안기산조성중,자세린사합고안기산총량(20.70%)고우웅성(9.11%),차이겁현저(P<0.01);5)자웅적안、표、기육、피제일한제성안기산균위힐안산,자어뇌적제일한제성안기산위소안산,웅어뇌화자웅성선제일한제성안기산위(단안산+광안산);6)자웅뇌적필수안기산지수(EAAI)재6부위중최고,분별위82.13화80.91,기육적EAAI분별위72.89화71.80,피적EAAI최저,분별위39.07화38.29。자웅세린사합고6부위균함유봉부적안기산,기중자성영양개치교웅성고。
Nutritional value of protein in brain, eye, gonad, swim bladder, muscle and skin of female and male Xenocypris microlepis Bleeker were determined by biochemical methods in order to ascertain the nutritional quality of different edible part of X. microlepis. The results indicated that:1)The content of moisture in skin is about 60%, and the content of moisture in other edible tissues are about 70%; the contents of crude protein in air bladder and skin are the highest, and that of muscle is higher, and of eye is the lowest(♀/♂,8.48%/7.37%). The content of crude protein in gonads is significantly higher in female than that in male(P<0.01). There is no significant difference in the content of crude protein in other edible tissues between male and female(P>0.05). 2)18 kinds of amino acids are determined in the 6 tissues or organs; 3)The total amino acid concentration of 6 edible part is as follows: (female) swim bladder >fishskin>ovary>muscle>brain>eye;(male) fishskin>swim bladder>muscle>testis>brain>eye;4) As to amino acid composition of the gonad, the total amino acid concentration of female X. microlepis (20.70%) is higher than male’s, the difference is extremely significant(P<0.01);5)The first limiting amino acid of the eye, swim bladder, muscle and fishskin of the female and male Xenocypris microlepis Bleeker is Val, the first limiting amino acid of the brain ( female) is Thr, and the first limiting amino acid of the brain(male)and the gonad (female and male) are Met+Cys;6)The essential amino acid index (EAAI) of the female and male brain are the highest (82.13, 80.91), and that of female and male muscle are 72.89 and 71.80, and of female and male fishskin are the lowest (39.07, 38.29). The results show that there are rich amino acid in 6 different edible parts of Xenocypris microlepis Bleeker, the nutrition of brain is highest, swim bladder and fishskin have more health function.
