建立了用质构仪测定大米直链淀粉含量的分析方法,制备了去蛋白淀粉、脱脂去蛋白淀粉,采用正丁醇-异戊醇反复结晶法分离直链淀粉和支链淀粉并制备成凝胶,利用质构仪进行硬度测定。该方法的线性回归方程为y=0.3912x+19.305,相关系数R2=0.9953,方法的回收率为98.86%~100.6%,标准方差为2.8%。
建立瞭用質構儀測定大米直鏈澱粉含量的分析方法,製備瞭去蛋白澱粉、脫脂去蛋白澱粉,採用正丁醇-異戊醇反複結晶法分離直鏈澱粉和支鏈澱粉併製備成凝膠,利用質構儀進行硬度測定。該方法的線性迴歸方程為y=0.3912x+19.305,相關繫數R2=0.9953,方法的迴收率為98.86%~100.6%,標準方差為2.8%。

A method was established for determination of amylose in rice,preparing deproteinated starch and defatted plus deproteinated starch, The amylose and purified by the n-butanol recrystallization method,texture analyzer was used to determine the hardness of gels made from deffr-ent proportions of amylose and amylopectin. The standard curve regression equation was y=0.3912x+19.305,R2=0.9953 The recovery ranged from 98.86% to 100.6% and the standard deviation was 2.8%.
