该文测定了小麦在不同储藏温度下脂肪酸值,采用扫描仪采集麦粒表面图像并提取图像特征,探究储藏过程中小麦颜色特征参数与脂肪酸值相关性。结果显示:用图像处理方法可观察到小麦储藏期间颜色变化。采用非线性最小二乘法,建立了亮度值I与脂肪酸值回归模型,两者的相关系数r=0.83,表现出较好相关性,说明以小麦籽粒图像特征参数表征小麦储藏过程陈化程度是可能的。

In this paper,the fatty acid of the wheat storage at different temperatures was determined, we scanned the wheat picture with the scanner,and the color character of picture was calculated and withdrawn by computer. The result showed that using the picture processing is able to reflect the change of the wheat’s surface color. The relation curve between Iuminance and fatty acid drawn regression model retrieved via least square method,the correlation coefficient r=0.83,and the trend is obvious. It pointed out that using imagery processing to determine the storage quality of wheat is possible.
