With the growing problems of food,study of high-sensitivity detection means for food safety is imminent. Ion mobility spectrometry(IMS)has advantages of quickness,sensitiveness, convenience and low cost which determine that IMS is suitable for detecting trace chemical substances in food. This review summarizes the fundamental principle and the research progress in food application of ion mobility spectrometry,in order to gain a broader and deeper development in the domestic food industry.
