以鱼粉为试验材料,经0、0.83、1.56、2.30、4.93、7.84 kGy电子束辐照后,研究辐照鱼粉中主要品质劣变指标在贮藏期的变化情况。结果表明:(1)电子束辐照对贮藏期微生物数量的变化无显著影响(P>0.05),贮藏末期各组微生物指标均降至卫生许可范围内;(2)电子束辐照对贮藏期挥发性盐基氮和酸价的变化无显著影响(P>0.05);(3)贮藏期过氧化值增幅随辐照剂量的增加而显著增大(P<0.05),但各辐照组鱼粉的末期过氧化值明显低于未辐照组(P<0.05);(4)随着辐照剂量的增加,电子束辐照对鱼粉中组胺含量增加的抑制作用越强(P<0.05)。由此可见,辐照可改善鱼粉的贮藏品质。

Samples of fish meal were exposed to electron beam with dosage levels of 0,0.83,1.56,2.30,4.93,7.84 kGy, to evaluate the effect of electron beam on quality indices of stored fish meal.The results showed that:electron beam irradia-tion had no influence on the changes of microbe quantity,volatile basic nitrogen content and acidity value in stored fish meal.The increase of peroxide values in irradiated fish meal during the whole storage period increased significantly with the increasing irradiation dosages(P<0.05),while the final peroxide values in irradiated fish meal were significantly lower than the control(P<0.05).The inhibitory effect of electron beam irradiation on histamine increase was enhanced as the increasing irradiation dosages(P<0.05).It was concluded that electron beam irradiation could improve the storage quality of fish meal.
