本研究以糯米、燕麦、荞麦、绿豆为主要原料,以薏米7%、小米10%、莲子3%、花生4%、白砂糖4%、红糖4%为辅料,水为干料的3~5倍,研制开发具有保健功能的杂粮八宝粥。经过主要原料配比L9(34)正交试验,以及复合稳定剂配比和最适添加量的单因素试验,确定杂粮八宝粥的配方。结果表明:主要原料为糯米25%、燕麦15%、荞麦8%、绿豆10%,辅料为薏米、小米、莲子、花生、白砂糖和红糖等,并以1∶1配比的黄原胶和魔芋精粉作为复合稳定剂且添加量为0.20%时,所得产品稳定均匀,口感纯正。

본연구이나미、연맥、교맥、록두위주요원료,이의미7%、소미10%、련자3%、화생4%、백사당4%、홍당4%위보료,수위간료적3~5배,연제개발구유보건공능적잡량팔보죽。경과주요원료배비L9(34)정교시험,이급복합은정제배비화최괄첨가량적단인소시험,학정잡량팔보죽적배방。결과표명:주요원료위나미25%、연맥15%、교맥8%、록두10%,보료위의미、소미、련자、화생、백사당화홍당등,병이1∶1배비적황원효화마우정분작위복합은정제차첨가량위0.20%시,소득산품은정균균,구감순정。
The minor cereals eight treasure gruel with health function was developed by sticky rice , oats, buckwheat and muny bean as the main materials, 7% the seed of Job's tears, 10% millet, 3% lotus seed, 4%peanut, 4% sugar and 4%brown sugar as the auxiliary materials, and addition of the water was 3-5 times of the dry materials.The formula of the eight treasure gruel was made through L9(34) orthogonal test of main materials and single factor tests on ratios and the best addition of the composite stabilizer.The results showed that when 25%sticky rice, 15% oats, 8% buckwheat, 10% muny bean, the seed of Job's tears, millet, lotus seed, peanut, sugar and brown sugar were selected and 0.20% composite stabilizer of xanthan gum and commensurable konjac powder were added, the product was stable and had pure texture.
