采用超微粉碎机对脱脂米糠进行超微化处理,制备超微脱脂米糠粉。采用离心机、黏度仪等设备研究超微脱脂米糠粉的物化特性。结果表明,超微化后随着脱脂米糠粉粒度减小,其持水力、吸油性、溶解性和水分蒸发速率都增大,粉体流动性变小;随着米糠粉体粒度的减小,其吸湿性各指标都随之增大;3种米糠的临界相对湿度分别为83.1%,84.2%,85.0%;超微脱脂米糠粉溶液黏度随着粉体粒度的减小和溶液温度的升高而减小,随着溶液浓度的增加而增加;而pH值对黏度影响较小。

채용초미분쇄궤대탈지미강진행초미화처리,제비초미탈지미강분。채용리심궤、점도의등설비연구초미탈지미강분적물화특성。결과표명,초미화후수착탈지미강분립도감소,기지수력、흡유성、용해성화수분증발속솔도증대,분체류동성변소;수착미강분체립도적감소,기흡습성각지표도수지증대;3충미강적림계상대습도분별위83.1%,84.2%,85.0%;초미탈지미강분용액점도수착분체립도적감소화용액온도적승고이감소,수착용액농도적증가이증가;이pH치대점도영향교소。
In this paper, we use grinder to smash the defatted rice bran, which can be make in the form of miniaturization, and to manufacture the tiny defatted rice bran. The centrifuge, particle size analyzer, surface area analyzer, powder characteristic tester, viscometer are need to study the physical and chemical properties of defatted rice bran. The results show that with the decreasing of the defatted rice bran powder particle size, its specific surface area, water holding capacity, oil absorption, solubility and water evaporation rate will increases. The fluidity of the powder changes smaller; with the decrease of the defatted rice bran powder particle size, the various indicators of hygroscopicity will increase, 3 groups of rice bran critical relative humidity respectively are 83.1%, 84.2%, 85.0%; micronized defatted rice bran powder solution is a non-Newtonian fluid, with the reduction of particle size and the increasing temperature, viscosity is decrease. With the increasing concentration, viscosity is decrease. The value of pH gives the small effect of the micronized defatted rice bran powder.
