添加益生菌的婴幼儿配方奶粉,贮藏于常温及30,40,50,60℃高温培养条件下,以益生菌最佳贮存温度-18℃作对照,分别不同时间测定奶粉中益生菌活菌数量。研究表明,益生菌在(-18±2)℃低温保存下、在常温下30,40,50℃存放,其活菌数均大于1.0×106 CFU/g,均符合国标要求。益生菌奶粉在60℃条件下保存菌数很快由存放开始的2.4×107 CFU/g下降为第3天的3.1×105 CFU/g,第5天后发生美拉德褐变反应。常温试验结果显示,含有益生菌的婴幼儿奶粉可以在常温条件下良好储存。

Added probiotic infant formula milk powder are stored at room temperature and 30, 40, 50, 60℃, respectively, and at the best storage temperature of probiotics (-18 ℃) as the control. The data of the number of viable cells of probiotics are measured at different temperatures in infant formula. Results show that probiotics in (-18±2) ℃cryopreservation, stored at 30, 40, 50 ℃, the numbers of viable cells are more than 1.0×106 CFU/g, which have arrived the national standards of China. Stored at 60℃for 3 d, the number of viable cells decrease from 2.4×107 to 3.1×105 CFU/g, and the samples have present brown color on the fifth day. Normal temperature test results show that infant formula can be stored preferably at room temperature conditions.
