随着营养学研究的发展,脂肪酸在全球越来越广泛的被人们重视。阐述食用油中脂肪酸的种类及其在人体内起到的重要作用,对植物油中脂肪酸的检测方法进行综述,分析这些检测方法的优缺点,并对脂肪酸检测技术的发展方向进行展望。
隨著營養學研究的髮展,脂肪痠在全毬越來越廣汎的被人們重視。闡述食用油中脂肪痠的種類及其在人體內起到的重要作用,對植物油中脂肪痠的檢測方法進行綜述,分析這些檢測方法的優缺點,併對脂肪痠檢測技術的髮展方嚮進行展望。

With the development of the nutritional research, fatty acid is more and more extensive attention by people around the world. This paper illustrates the types of fatty acids in edible oils and it plays an important role in the human body, the detection method of fatty acids in vegetable oil are reviewed. The disadvantages and shortcomings of different detection methods are discussed, and develop trends for detection technique for fatty acids are prospected.
