以渝紫7号为试验材料，研究了花青素在紫薯块根中的分布。结果表明：紫薯花青素开始时集中在薯皮(周皮和韧皮部薄壁组织)和薯芯(木质部薄壁组织)，在这两者之间即初生形成层出现白斑，随着薯龄的递增，花青素逐渐向薯块方向扩散并最终布满整个薯块，初生形成层处的白斑逐渐减少直至消失。通过花青素在紫薯块根中的动态分布研究，使人们能了解花青素在紫薯块根中的主要集中部位，并且能更好地掌握花青素的最佳提取部位和提取时间，从而为以后进行紫薯花青素的研究提供理论依据。

The distribution of anthocyanin in tuberous roots was studied by taking Yuzi 7 as material.The results showed that purple potato anthocyanin was concentrated in the skin(periderm and phloem parenchyma)and core(xylem parenchyma)initially,between the two was primary cambium white patches.With the increasing age of purple potato,anthocyanin was gradually spreading of direction and eventually filled the whole potato piece,white spot of primary cambium reduced gradually and disappeared finally.By studying the dynamic distribution of anthocyanin in purple potato tuberous root,people could understand the the centralized site of anthocyanins in tuberous roots purple potato root,and could better grasp the best extract part and extracting time,which could provide the basis for later anthocyanins studies of purple potato.
