The physical properties,chemical structure and biological properties of zein are introduced in this paper.It can be widely used in food industry such as edible packaging, functional peptides, fresh food with its special properties.Zein had high cost in extracting process and its mechanical property was poor.But with the progress of science and technology,zein would eliminate the disadvantage and had a bright future.
