采用静态顶空与气相色谱质谱联用技术相结合建立了一种快速定量分析白酒中双乙酰含量的方法。通过优化确定了方法的最佳分析条件:目标白酒样品酒精度稀释至26%vol,加入适量 NaCl 过饱和,70℃恒温加热20 min 后吸取顶空气体于气相色谱质谱联用仪中进行分析。结果表明,该方法检出限低于20μg/L,5种不同香型白酒及模拟白酒的双乙酰回收率为87.1%~108.3%,RSD 为0%~10.7%,方法具有良好的准确性和精密度,适用于白酒中双乙酰的定量分析。

A rapid method for quantitative analysis of diacetyl content in Baijiu(liquor) by using static headspace coupled with GC-MS was intro-duced. The best analytical conditions were obtained through the optimization as follows: firstly, alcohol content of liquor sample diluted to 26 %vol, then the solution supersaturated with NaCl, after 20-minute heating at a constant temperature of 70 ℃ , the upper gas was analyzed by GC-MS. Such method displayed good accuracy and high precision, LOD was below 20 μg/L, and diacetyl recoveries of 5 liquor samples of differ-ent flavor type and of simulated liquor was between 87.1 %~ 108.3 %, and RSD was 0 %~ 10.7 %. Such method was suitable for quantitative analysis of diacetyl content in Baijiu(liquor).
