目的寻找快速、准确地测定食品中柠檬黄、胭脂红、日落黄的方法。方法采用色谱柱进行分离，流动相为0．02 mol/L乙酸铵、甲醇，流速1．0 mL/min ，梯度洗脱，检测波长254 nm。结果该方法可以同时测定酱腌菜中3种色素，回归方程相关系数均在0．999以上。加标回收率在86．7％～91．9％之间。结论该方法简单、快速、准确、灵敏度高、结果稳定，适合测定酱腌菜中柠檬黄、日落黄、胭脂红。
목적심조쾌속、준학지측정식품중저몽황、연지홍、일락황적방법。방법채용색보주진행분리，류동상위0．02 mol/L을산안、갑순，류속1．0 mL/min ，제도세탈，검측파장254 nm。결과해방법가이동시측정장업채중3충색소，회귀방정상관계수균재0．999이상。가표회수솔재86．7％～91．9％지간。결론해방법간단、쾌속、준학、령민도고、결과은정，괄합측정장업채중저몽황、일락황、연지홍。
Objective To detect lemon yellow ,carmine and sunset yellow in food rapidly and precisely .Meth-ods Samples were sepreated by using chromatographic column .Mobile phase was 0 .02 mol/L ammonium acetate and methanol and flow speed was 1 .0 mL/min .After gradient elution ,samples were detect at wavelength of 254 nm .Results Three pigments were detected simultaneously and the correlation coefficients of regression equations were all more than 0 .999 .The recovery rate was 86 .7% -91 .9% .Conclusion High-performance liquid chromatog-raphy could be an simple ,rapid ,precise and astute method for the detection of lemon yellow ,carmine and sunset yellow in pickles .
