以姜黄为研究对象,采用淀粉酶、果胶酶、纤维素酶以及复合酶进行处理,结果表明:生物酶可以分解破坏色素与杂质的结合,有助于姜黄的染色.单独使用果胶酶和淀粉酶效果好于纤维素酶,但以3者的复合酶处理效果最佳.复合酶处理后吸光度可提高30%左右,得色深度可提高30%~40%.复合酶法酶解的工艺条件为:复合酶为m(纤维素酶)∶m(果胶酶)∶m(淀粉酶)=1∶6∶3,用量为10%(对姜黄质量),温度60℃,时间2 h.

Amylase, pectase, cellulase and complex enzyme were used to treat tunmeric pigment. The re-sults showed that enzyme could break the combination between pigment and impurity and improve the dye-ing. The effect of individual amylase and pectase was better than cellulose, and complex enzyme was the best. The light absorbance after enzyme treatment could be increased about 30%, and the color depth could be increased by 30%~40%. The optimal technique of enzyme treatment was that the ratio of cellulase, pec-tase and amylase was 1∶6∶3, mass percentage of complex enzyme on tunmeric was 10%, treated at 60 ℃for 2 h.
