目的了解本市销售食品中金黄色葡萄球菌的污染状况,为金黄色葡萄球菌食源性疾病的预防控制提供情报。方法按照国家标准方法G B4789.10—2010,对市售11大类共计348份样品进行分离鉴定。结果348份样品中共检出金黄色葡萄球菌22株,检出率6.3%;11类食品中以沙拉中金黄色葡萄球菌污染最为严重,检出率为37.5%,其次是熟肉制品和冰激凌,检出率分别为13.5%和12.5%,即食非发酵豆制品、蛋制品和婴儿配方奶粉均未检出。结论本市销售食品中金黄色葡萄球菌污染比较严重,而且分布广泛,沙拉、熟肉制品和冰激凌是主要的污染食品,应加强有关食品的监督管理。

Objective To understand the status of Staphylococcus aureus contamination in Zhengzhou commercial food and provide information for the prevention and control of Staphylococcus aureus foodborne illness. Methods In accordance with the national standards GB4789.10-2010, isolation and identification of Staphylococcus aureus were performed in a total of 348 food samples of the commercially available 11 categories. Results 22 Staphylococcus aureus were detected in 348 food samples, the detection rate was 6.3%. Staphylococcus aureus contamination in salad was the most serious in the 11 categories of food, with the detection rate of 37.5%, followed by cooked meat and ice cream with the detection rate of 13.5% and 12.5%, respectively. Staphylococcus aureus was not detected in the ready-to-eat non-fermented soy products, egg products and infant formula. Conclusion Staphylococcus aureus contamination in Zhengzhou commercial food is serious and widely distributed, while salad, cooked meat and ice cream are the main contaminated food. The supervision and management of the related food should be strengthen.
