制备高效降解亚硝酸盐的乳酸菌冻干剂,并对制剂的存活率、亚硝酸盐降解率及其产亚硝酸盐还原酶的活力影响进行研究。应用真空冷冻干燥法,对添加保护剂的3种乳酸菌分别进行菌种冻干剂的制备,用菌落计数法测定菌种存活率,分光光度法测定亚硝酸盐降解率和酶活力。结果表明,菌种制剂存活率高于51.4%;亚硝酸盐降解率与冻干前相比差异不显著;冻干剂产亚硝酸盐还原酶的活力较冻干前相比分别下降了7.62,9.02,5.44 U/mL。真空冷冻干燥乳酸菌能保持菌株原有特性。
製備高效降解亞硝痠鹽的乳痠菌凍榦劑,併對製劑的存活率、亞硝痠鹽降解率及其產亞硝痠鹽還原酶的活力影響進行研究。應用真空冷凍榦燥法,對添加保護劑的3種乳痠菌分彆進行菌種凍榦劑的製備,用菌落計數法測定菌種存活率,分光光度法測定亞硝痠鹽降解率和酶活力。結果錶明,菌種製劑存活率高于51.4%;亞硝痠鹽降解率與凍榦前相比差異不顯著;凍榦劑產亞硝痠鹽還原酶的活力較凍榦前相比分彆下降瞭7.62,9.02,5.44 U/mL。真空冷凍榦燥乳痠菌能保持菌株原有特性。

The vacuum cryodesiccation lactic acid bacteria with high efficient degradation of nitrite is obtained, and the survival rate of bacterial preparations, decomposition rate of nitrite and the effect of nitrite reductase are studied. The vacuum cryodesiccation method is used respectively to prepare the vacuum cryodesiccation strain of the three kinds of lactic acid bacteria added protective agent. Survival rate is traced by colony counting method, the nitrite degradation rate and enzyme activity are determined. The results show that the survival rate of bacterial preparation is higher than 51.4%; after treatment the change of nitrite degradation rate is not significant. Compared with before, the activity of nitrite reductase produced by the vacuum cryodesiccation strain decreases by 7.62, 9.02, 5.44 U/mL respectively. The vacuum cryodesiccation lactic acid bacteria can maintain its original characteristics.
