目的:通过检测分析了解云南省两种主要野生鸡枞菌营养成分及矿物质元素及重金属含量。方法:采用中华人民共和国国家标准《食品卫生检验方法》理化部分的相应方法,对其主要营养成分:总蛋白质、粗脂肪、氨基酸、水溶性维生素、矿物质元素及重金属进行定量分析。结果:球形鸡枞菌与条纹鸡枞菌蛋白质含量分别为4.23%,4.72%;必需氨基酸(EAA)与氨基酸总量(TAA)比值分别为34.8%,39.3%;硒含量分别为0.054mg/100g,0.027 mg/100 g;铅含量分别为1.10 mg/kg,1.44 mg/kg。结论:云南省两种野生鸡枞菌是高蛋白、高维生素B2、低脂肪食品,氨基酸及矿物质元素含量丰富,铅超过国家限量标准。

Objective:Through quantitative analysis main nutrition component and mineral elements of two kinds of wild edible Termitomyces in yunnan province, founded main nutrition component and mineral elements form and databank. Method:Used national food safety standard Determination methods quantitative determination contect of general protein, coarse fat, amino acids, vitamin,mineral elements and heavy metals. Result:Termitomyces globules and Termitomyces striatus protein contents were 4.23%,4.72%. EAA and TAA ratios were 34.8%,39.3%. Selenium contents of 0.054mg/100g, 0.027mg/100g, Lead contents were 1.10 mg/kg,1.44 mg/kg. Conclusion:Yunnan province, two kinds of wild edible Termitomyces were high in protein, high vitamin B2, low-fat foods, amino acids and minerals are abundant, lead exceeded the national limits.
