本试验以酸值(AV)、过氧化值(POV)和丙二醛(MDA)含量作为评价指标,研究乙氧基喹啉、叔丁基羟基茴香醚(BHA)、二叔丁基羟基甲苯(BHT)三种抗氧化剂按不同组合或单体的形式添加到油脂中对米糠毛油抗氧化性能的影响。结果表明:与对照组相比添加不同抗氧化剂或抗氧化剂组合,米糠毛油AV无显著变化;POV随着时间延长不断提高,19 d后抗氧化剂添加组POV增速较对照组缓慢,且复合抗氧化剂抗氧化效果优于单体抗氧化剂。添加单体抗氧化剂后油脂MDA含量与对照组相比有所降低,复合抗氧化剂组MDA含量均低于单体组。结果提示,复合抗氧化剂的抗氧化效果优于单一抗氧化剂,单一抗氧化剂中以乙氧基喹啉效果最好,复合抗氧化剂则以0.15%乙氧基喹啉和0.015%BHA复配使用效果最好。

본시험이산치(AV)、과양화치(POV)화병이철(MDA)함량작위평개지표,연구을양기규람、숙정기간기회향미(BHA)、이숙정기간기갑분(BHT)삼충항양화제안불동조합혹단체적형식첨가도유지중대미강모유항양화성능적영향。결과표명:여대조조상비첨가불동항양화제혹항양화제조합,미강모유AV무현저변화;POV수착시간연장불단제고,19 d후항양화제첨가조POV증속교대조조완만,차복합항양화제항양화효과우우단체항양화제。첨가단체항양화제후유지MDA함량여대조조상비유소강저,복합항양화제조MDA함량균저우단체조。결과제시,복합항양화제적항양화효과우우단일항양화제,단일항양화제중이을양기규람효과최호,복합항양화제칙이0.15%을양기규람화0.015%BHA복배사용효과최호。
The trial was conducted to study the effects of several antioxidants on the antioxidation of crude rice bran oil.Using acid value (AV),peroxide value (POV)and malondialdehyde (MDA)as evaluation parameter,the effects of ethoxyquinoline,butylated hydroxytoluene (BHT),butyl hydroxy anisd (BHA) and complex of the antioxidants on the an-tioxidation of crude rice bran oil were studied under (37 ±1)℃ accelerated oxidation conditions.The results showed that:there were no significant differences in AV among all the groups.The POV increased slowly 19 days ago,but after that the POV increasing speed of antioxidants adding group was lower than that of control group,and the inhibitory effect of complex antioxidant was beffer than sing ones.The content of MDA in the groups with complex antioxidant were lower than that with single antioxidant.The results indicated that the effect of complex antioxidants were better than single antioxidant in improv-ing the antioxidative activity of crude rice bran oil.Among 4 kinds of complex antioxidants,the effect of 0.15%ethoxyquino-line+0.015%BHA was slightly better than the others,and the same as 0.3%ethoxyquinoline in 3 kinds of single antioxidants.
