赤藓糖醇是一种四碳醇，是应用于食品和医药工业的天然甜味剂。由于赤藓糖醇具有特殊的营养特性，它作为功能糖被应用于食品中，给糖尿病人和肥胖患者带来了福音。在国外，工业上一般采用Aureobasidium sp．和Pseudozyma tsukubaensis等突变的高渗酵母生产赤藓糖醇。由于生产效率高，成本适中，它还被用作生产其他糖的原料。本文主要综述了赤藓糖醇的理化性质、生物合成途径以及提高微生物赤藓糖醇生产力的策略。

Erythritol, a four-carbon polyol, is a biological sweetener with applications in food and pharmaceutical industries .It is also used as a functional sugar substitute in special foods for people with diabetes and obesity because of its unique nutritional properties .In abroad , Erythritol is produced by microbial methods using mostly osmophilic yeasts and has been produced commercially using mutant strains of Aureobasidium sp.and Pseudozyma tsukubaensis.Due to the high yield and productivity in the industrial scale of production , erythritol serves as an inexpensive starting material for the production of other sugars .This review focuses on the physicochemical properties of erythritol , pathway of erythritol biosynthesis and strategies used to enhance erythritol productivity in microbes .
