测定东洞庭湖区5种野生鱼类(草鱼、鲫鱼、鲤鱼、鲶鱼、黄颡鱼)的氨基酸营养成分,分析其氨基酸种类及比例,并对它们的营养价值进行评价。结果表明,所测定5种野生鱼类蛋白质含量均较高,氨基酸种类齐全,比例合理,是人类理想的优质蛋白源。
測定東洞庭湖區5種野生魚類(草魚、鯽魚、鯉魚、鯰魚、黃顙魚)的氨基痠營養成分,分析其氨基痠種類及比例,併對它們的營養價值進行評價。結果錶明,所測定5種野生魚類蛋白質含量均較高,氨基痠種類齊全,比例閤理,是人類理想的優質蛋白源。
측정동동정호구5충야생어류(초어、즉어、리어、염어、황상어)적안기산영양성분,분석기안기산충류급비례,병대타문적영양개치진행평개。결과표명,소측정5충야생어류단백질함량균교고,안기산충류제전,비례합리,시인류이상적우질단백원。
Determined the contents of amino acids from five kinds of wild fish (Ctenopharyngodon idellus, crucian, carp, catfish, pelteobagrus fulvidraco) in Dongting lake area at first, and then analyzed the amino acid types and proportions. Finally, evaluated their nutritional value. The results show that they are all of great nutritive value for the high content of protein, rich amino acids for human beings. Also, the ratios of the essential amino acids are similar to the component formula of essential amino acids for human body.
