杨梅是我国南方特有的佳果,其营养成分丰富,但由于杨梅果实无外皮包裹,且成熟期正值梅雨季节,因此杨梅保鲜技术的研究具有重要意义。对杨梅的物理、化学保鲜方法及其研究进展进行综述,并提出杨梅保鲜技术的发展方向,旨在为杨梅保鲜技术的进一步研究提供参考。

Waxberry is the special fruit of southern China, and it is rich in nutrients. However, due to the lack of cortical bag, and waxberry fruit mature during the rainy season, waxberry preservation technology research is of great significance. In this paper, the physical and chemical preservation methods of waxberry and their research progress are summarized. Besides, the development direction of waxberry preservation technology is proposed, aiming to provide a reference for the further study of the preservation technology of waxberry.
