麦绿素是从麦类植物嫩苗中提取的一种复合成分物质,含有丰富的蛋白质、氨基酸、叶绿素和类黄酮等营养活性物质,具有延缓衰老、降血糖、降血脂、抗癌和增强免疫力等多种生理功效。在前人的研究基础上,主要从其营养及功能性组分、保健功能以及加工工艺等方面概述国内外的研究现状,以期为今后麦绿素产品的深度开发提供参考。

맥록소시종맥류식물눈묘중제취적일충복합성분물질,함유봉부적단백질、안기산、협록소화류황동등영양활성물질,구유연완쇠로、강혈당、강혈지、항암화증강면역력등다충생리공효。재전인적연구기출상,주요종기영양급공능성조분、보건공능이급가공공예등방면개술국내외적연구현상,이기위금후맥록소산품적심도개발제공삼고。
Barley Green is rich in nutritional and bioactive presences, including proteins, amino acids, chlorophyll and flavonoids, which is a composite component substances extracted from the leaves of Poaceae plants with multiple physiological functions such as anti-aging, hypoglycemic function, hypolipidemic function, anti-cancer, enhance immunity and so on. In order to provide a reference in future depth development of barley green, the current research status at home and abroad of nutritional and bioactive ingredients, health function and processing technology in barley green are reviewed on the foundation of previous researches.
