对林蛙油酶解条件进行优化,筛选适合实际生产所用的蛋白酶,分析酶解产物分子量,开发一种多肽口服液产品。结果表明,中性蛋白酶和风味蛋白酶以1∶1的比例复合酶解林蛙油,水解度最高,酶解条件为温度50℃, pH值7,加酶量4%,料水比1∶100,酶解时间4 h;通过基质辅助激光解吸电离飞行时间质谱仪分析表明,酶解液主要分子量分布在1000~3000 Da与5000~7000 Da;开发的多肽口服液性状稳定、风味良好。

대림와유매해조건진행우화,사선괄합실제생산소용적단백매,분석매해산물분자량,개발일충다태구복액산품。결과표명,중성단백매화풍미단백매이1∶1적비례복합매해림와유,수해도최고,매해조건위온도50℃, pH치7,가매량4%,료수비1∶100,매해시간4 h;통과기질보조격광해흡전리비행시간질보의분석표명,매해액주요분자량분포재1000~3000 Da여5000~7000 Da;개발적다태구복액성상은정、풍미량호。
The enzymatic hydrolysis conditions of Oviducts Ranae are optimized, suitable protease for produettion is selected, and its enzymatic hydrelysates are determined by mass spectrometry. Meanwhile, a polypeptide oral liquid is developed. The results show that neutrase and flavourzyme are added in Oviductus Ranae in the proportion of 1∶1 to get Oviductus Ranae enzymatic hydrolysate. And the optimum conditions are: temperature 50 ℃, pH 7, enzyme quantity 4%, 1∶100 of solid-liquid ratio and reaction time 4 h. According to determination results of laser desorption ionization time-of-fligh mass spectrometry, molecular weight are mainly distributed in 1 000~3 000 Da and 5 000~7 000 Da . The polypeptide oral liquid of Oviductus Ranae has high stability and good flavor.
