为了解不同甘薯品种的淀粉粒分布差异,为甘薯的深加工提供科学依据,以周口师范学院生物实验园地种植的12个甘薯品种为研究对象,选取成熟、性状良好、新鲜甘薯块茎,用显微粒度分析软件UV-G 和 BT-9300S 型激光粒度分布仪分别对甘薯块茎顶部、中部和基部的淀粉粒进行研究。结果表明:12个甘薯品种的淀粉粒度集中在8.13~84.73μm,中位径、平均径最大的是豫薯13的基部,中位径最小的是济薯15的中部,豫薯13基部边界粒径最大,其次是徐薯18的中部,最小的是豫薯13的顶部。豫薯12、徐薯18和豫薯13基部的淀粉颗粒最适宜粉条加工。

To explore the distribution differentiation of starch particle of different sweet potato varieties and provide a scientific reference for their deep processing,taking the twelve sweet potato varieties in field laboratory of Zhoukou Normal University as the research object,using mature good character fresh tubers of sweet potato as test material,the authors analyzed starch particle in the top, middle and bottom of sweet potato tuber by analysis software of the particle microphotograph.The results showed that the starch particle distribution was 8.13~84.73 μm in the twelve sweet potato varieties.The bottom of Yushu 13 had maximum middle diameter and average diameter,the minimum was middle of Jishu 15;The maximal boundary diameter was Jishu 18 and then the bottom of Xuzishu 13,the minimum was the top of Yushu13.The Yushu 12,Xushu 18 and Yushu 13 were better for gelatinization deep processing.
