As a natural edible alkalescent polysaccharide , chitosan had many advantages such as high value -added , a kind of renewable resources , antibacterial, non-toxic, easy to be filmed, biodegradable, and chelating heavy metal.The advance in research of chitosan and its derivative on food industry and agriculture was summarized.The application of single chitosan , modified chitosan and composite in food preservation was overviewed.The plants, antibacterial antioxidant effect , clarified fruit juice , additives and the food industry wastewater treatment were introduced in detail , and the future development of fresh film of chitosan was prospected.
