以紫红色四季报春花为原料提取色素,并对该色素的稳定性进行研究。结果表明,适宜的提取溶剂为pH=1的95%乙醇溶液,该色素在382 nm处有最大吸收峰;该色素热稳定性差,有较强的耐光性,耐氧化性,还原性差,在酸性条件下不稳定;金属离子Na+、K+、Mg2+、Zn2+对色素的影响较小,而Fe3+对该色素稳定性的影响较大;常用食品添加剂(葡萄糖、蔗糖、可溶性淀粉和柠檬酸)对该色素色泽无不良影响。

이자홍색사계보춘화위원료제취색소,병대해색소적은정성진행연구。결과표명,괄의적제취용제위pH=1적95%을순용액,해색소재382 nm처유최대흡수봉;해색소열은정성차,유교강적내광성,내양화성,환원성차,재산성조건하불은정;금속리자Na+、K+、Mg2+、Zn2+대색소적영향교소,이Fe3+대해색소은정성적영향교대;상용식품첨가제(포도당、자당、가용성정분화저몽산)대해색소색택무불량영향。
Pigment is extracted from purple primrose seasons as raw material,and its stability was studied.The results showed that the 95% ethanol solution with pH=1 was a better extraction solvent,the pigment had maximum absorption peak at 382 nm;the pigment had good light resistance,bad reduction and oxidation resistance,and was unstable under acid condition ;The metal ions Na+、K+、Mg2+、Zn2+have less effect on the pigment,but Fe3+has larger effect on the stability of the pigment,while food additives(for example:glucose,sucrose,soluble starch and citric acid),low valence metal ions had no negative effect.
