目的:探讨新疆葡萄树伤流液的化学成分及其抗氧化性作用。方法以理化鉴别方法对新疆葡萄树伤流液化学成分进行预试;以没食子酸为标准品,采用Folin-Ciocalteu比色法测定新疆不同品种葡萄树伤流液中总多酚的含量;以葡萄糖为标准品,采用硫酸-蒽酮法测定新疆不同品种葡萄树伤流液中多糖的含量;以牛血清蛋白为标准品,采用考马斯亮蓝法测定新疆不同品种葡萄树伤流液中蛋白的含量;采用IC P-O ES法测定新疆不同品种葡萄树伤流液中矿质元素的含量;采用高效液相色谱法测定新疆不同品种葡萄树伤流液中氨基酸的含量。以抗坏血酸(0.2 mg/mL )为对照,采用羟自由基试剂盒法检测新疆葡萄树伤流液的抗氧化活性。结果新疆不同品种、不同产地葡萄树伤流液中,多酚含量为2.6~6.6mg/L,多糖含量为18.3~816mg/L,蛋白含量为3.0~22.4 mg/L ;氨基酸有17种,总含量为6.20~201.22 mg/L ;矿质元素有10种,含量为0.06~118.71 mg/L ;且清除· O H能力明显高于Vc。结论新疆葡萄树伤流液富含氨基酸、多糖、多酚、蛋白等化学成分,并且由于品种和产地不同,氨基酸、多糖、多酚、蛋白的含量有差异;葡萄树伤流液对· OH 的清除能力强,其抗氧化活性随葡萄品种、产地、生态气候条件的不同有所差异。

목적:탐토신강포도수상류액적화학성분급기항양화성작용。방법이이화감별방법대신강포도수상류액화학성분진행예시;이몰식자산위표준품,채용Folin-Ciocalteu비색법측정신강불동품충포도수상류액중총다분적함량;이포도당위표준품,채용류산-은동법측정신강불동품충포도수상류액중다당적함량;이우혈청단백위표준품,채용고마사량람법측정신강불동품충포도수상류액중단백적함량;채용IC P-O ES법측정신강불동품충포도수상류액중광질원소적함량;채용고효액상색보법측정신강불동품충포도수상류액중안기산적함량。이항배혈산(0.2 mg/mL )위대조,채용간자유기시제합법검측신강포도수상류액적항양화활성。결과신강불동품충、불동산지포도수상류액중,다분함량위2.6~6.6mg/L,다당함량위18.3~816mg/L,단백함량위3.0~22.4 mg/L ;안기산유17충,총함량위6.20~201.22 mg/L ;광질원소유10충,함량위0.06~118.71 mg/L ;차청제· O H능력명현고우Vc。결론신강포도수상류액부함안기산、다당、다분、단백등화학성분,병차유우품충화산지불동,안기산、다당、다분、단백적함량유차이;포도수상류액대· OH 적청제능력강,기항양화활성수포도품충、산지、생태기후조건적불동유소차이。
Objective To explore chemical constituents and antioxidant activity of bleeding sap of Xinjiang grape trees .Methods The chemical constituents in bleeding sap of Xinjiang grape tree were pro-tested by physical and chemical methods .Using gallic acid as a standard ,the content of phenol in bleeding sap of Xinjiang grape tree from different varieties were determined by Folin-Ciocalteu Colorimetry .Anthrone-sul-furic acid method was used to determine the content of polysaccharide ,using glucose as a standard .Using bovine serum albumin as a standard ,the protein contents were detected by Coomassie brilliant blue meth-od .The mineral elements of samples were determined by ICP-OES .The free amino acids content in bleed-ing sap of Xinjiang grape tree were analyzed by HPLC .Using ascorbic acid(0 .2 mg/mL) as a standard , the bleeding sap of Xinjiang grape tree’s antioxidant activities were detected by hydroxyl radical reagent kit .Results Among different kinds of Xinjiang grapevine bleeding sap from different origins ,the poly phenols content was 2 .6~6 .6 mg/L ,the polysaccharide content was 18 .3~816 mg/L ,and the protein content was 3 .0~22 .4 mg/L .The type of mineral elements and amino acids in bleeding sap were 17 and 10 ,whose contents were 6 .20~201 .22 mg/L and 0 .06~118 .71 mg/L .Its scavenging ability on · OH was higher than Vc .Conclusion Bleeding sap of Xinjiang grape tree is rich in amino acids ,polysaccha-rides ,poly phenols and protein .The contents are different due to the different species .Bleeding sap of grape tree has a strong scavenging activity on · OH ,and antioxidant activities are different in different kinds of grapes ,region and the climate .
