为贵州大鲵资源的保护和利用提供科学依据,采用常规营养成分分析方法测定了贵州人工养殖子二代大鲵(Andrias davidianus)肌肉的粗蛋白质、粗脂肪和氨基酸等营养成分。结果表明:贵州人工养殖子二代大鲵肌肉中水分含量为(78.94±0.29)%,粗蛋白为(16.20±0.69)%,粗脂肪为(2.53±0.02)%,粗灰分为(0.90±0.18)%。共检测到17种氨基酸,其总量为(87.06±2.95)%,其中7种必需氨基酸(不包括色氨酸)总量为(35.34±1.22)%,占氨基酸总量的40.59%;6种鲜味氨基酸总量为(40.78±1.49)%,占氨基酸总量的46.84%;必需氨基酸与非必需氨基酸的比例为68.35%。与野生大鲵相比,贵州人工养殖子二代大鲵的肌肉营养成分中除粗蛋白含量平均高于野生大鲵外,粗脂肪、粗灰分含量和氨基酸组成均与野生大鲵相当。与其他地方的子二代大鲵相比,除粗灰分含量较低外,粗蛋白、粗脂肪含量和氨基酸组成上基本一致。

The nutritional components in the muscle of A.davidianus of Guizhou were tested and analyzed with routine methods to provide a scientific basis for protecting and utilizing Guizhou A.davidianus resource.The results showed that:the moisture,crude protein,crude lipid and ash in fresh muscle of Chinese giant salamander were (78.94±0.29)%,(16.20±0.69)%,(2.53±0.02)%,(0.90±0. 18)%,respectively.The composition of amino acids of muscle was 17 common amino acids and 7 essential amino acids for human needs(no analysis was made for tryptophane).In dry sample the total content of amino acids was (87.06 ± 2.95)%;the content of essential amino acids was (35.34 ± 1.22)% ;the percentage of essential amino acids in total amino acids was 40.59%;in dry sample the content of six kinds delicious amino acids was(40.78±1.49)%,which occupied 46.84% of the total amino acids,the ratio of amino acids to no-essential amino acids (EAA/NEAA)was 68.35%.Compared with wild A.davidianus, the content of crude protein in the muscle of F2 generation of A.davidianus in Guizhou was higher than that of wild giant A.davidianus,but the content of crude lipid,ash and amino acids were comparable with those of wild A.davidianus.Compared with F2 generation of A.davidianus in other place,the crude ash was lower,while the content of crude protein,crude fat and composition of amino acid was similar with it.
