目的:分析大理市市售河虾和鲫鱼体中Cu(铜)、Zn(锌)、Pd(铅)、Cd(镉)的含量,以评价食用安全性。方法:用湿法消化和火焰原子吸收法测定虾和鲫鱼中重金属含量。结果:在鱼和虾的肌肉中Cu、Pd、Cd的含量较低,Zn的含量相对较高,根据《NY5073-2006无公害食品、水产品中有毒有害物质限量》和《GB13106-91食品中锌限量标准》,4种元素含量均未超标;但虾头中Pb含量超标2~3倍。结论:虾头中Pb含量超标,经常食用存在潜在危害,应引起消费者重视。

목적:분석대리시시수하하화즉어체중Cu(동)、Zn(자)、Pd(연)、Cd(력)적함량,이평개식용안전성。방법:용습법소화화화염원자흡수법측정하화즉어중중금속함량。결과:재어화하적기육중Cu、Pd、Cd적함량교저,Zn적함량상대교고,근거《NY5073-2006무공해식품、수산품중유독유해물질한량》화《GB13106-91식품중자한량표준》,4충원소함량균미초표;단하두중Pb함량초표2~3배。결론:하두중Pb함량초표,경상식용존재잠재위해,응인기소비자중시。
Objective: To evaluate the food safety in the market crucian and shrimp through making an analysis of the content of heavy metals (Cu, Zn, Pd and Cd)in the crucian and shrimp from the market of Dali. Methods: The samples were pretreated with nitric acid and perchloric acid, and then the heavy metals in the crucian and shrimp were determined by flame atomic absorption spectrophotometry. Results: The content of Cu, Pd and Cd was lower; the content of Zn was higher. According to "NY5073-2006 toxic and harmful substances limits of no social effects of pollution food and marine products" and "GB13106-91 tolerance limit of Zn in food", the content of the four metals in the muscle of crucian and shrimp did not exceed the limits. The content of Pd in the head of shrimp was over the limits 2-3 times. Conclusion: The content of Pd in the head of shrimp exceeded the limit. The head of shrimp for food may be potentially unsafe. It should be noted by consumers.
