用不同质量浓度亚硒酸钠溶液浸泡糙米并发芽,研究其对糙米富集硒及γ-氨基丁酸效果的影响。结果表明,随着硒质量浓度的增大,发芽糙米中硒的含量呈现增加趋势;较低质量浓度的亚硒酸钠可促进发芽糙米富集γ-氨基丁酸,而高质量浓度则会产生抑制作用。综合考虑发芽率、硒含量和γ-氨基丁酸含量,确定亚硒酸钠适宜质量浓度为120 mg/L,此质量浓度浸泡后的糙米发芽后硒含量为1.06 mg/100 g,约是对照组的106倍;γ-氨基丁酸含量为54.07 mg/100 g,比对照组提高了0.68 mg/100 g。通过糙米发芽过程中自身的生物富集与转化,可以得到既富硒又富γ-氨基丁酸的功能性食品原料。

This experiment is undertaken to examine the effect of selenium on germination brown rice (GBR) enriched selenium and γ-aminobutyric acid (GABA) with different concentration of Na2SeO3 solution. Results show that selenium content in GBR increases with the concentration of selenium increase. Low concentrations of Na2SeO3 solution can promote the GRB enriched GABA, while high concentrations inhibit. The germination rate, content of selenium and GABA are considered to study the optimal concentration of Na2SeO3. Compared with the control group, the contents of selenium and GABA in brown rice at 120 mg/L soaking are 1.06 mg/100 g and 54.07 mg/100 g, about 106 times and 0.68 mg/100 g higher, respectively. It is concluded that functional food raw materials can be obtained rich both Se and GABA, through brown rice biological accumulation and transformation in its germination process.
