研究东北黑蜂椴树蜜应用条件对羟基自由基清除率的影响,采用Fenton方法测定东北黑蜂椴树蜜清除羟基自由基及抗氧化能力,采用Folin-Ciocalteu比色法测定总酚含量。通过单因素和正交试验的方法,分析加热时间、作用温度、 pH值和质量浓度对羟基自由基清除率效果的影响。结果表明总酚含量越高,清除羟基自由基能力越强,抗氧化能力越强,说明蜂蜜抗氧化活性的强弱与蜂蜜所含的酚类物质有一定的关联性。正交试验表明,温度为35℃,时间为30 min,质量浓度为6.0 mg/mL, pH值为6时,羟基自由基清除率最高,为38.8%。

The effect of Northeast honey application conditions on the scavenging ability of hydroxyl radicals is summarized emphatically. Fenton reaction is used to determine the scavenging effect of hydroxyl radicals and oxidation resistance behavior of Northeast honey, and the total phenols content is determined by Folin-Ciocalteu colorimetric method. Effects of heating time, operative temperature, and concentration on hydroxyl radicals clearance rate are analyzed through the single factor experiment and orthogonal test. The results show that the higher total phenols content, the better effect of oxidation resistance, the stronger is reductive enough to clear the hydroxyl radicals. It is proved that there is some relationship between antioxidant activity and phenols content of honey. By means of orthogonal experiments, an optimum clearance condition turns out to be the reaction temperature of 35 ℃, the treatment time of 30 min, pH value 6 and the concentration of 6 .0 mg/mL. The highest clearance rate of hydroxyl radicals is 38.8%.
