以马铃薯淀粉为原料,经α-淀粉酶2次水解过程制备得到多孔马铃薯淀粉,研究酶用量、反应温度、反应时间、反应器振荡转速等因素对一次酶解和二次酶解产品收率和吸油率的影响。以吸油率为评价指标确定多孔马铃薯淀粉的最佳制备条件,α-淀粉酶一次水解最优条件是酶用量150 U/g,反应温度50℃,反应时间16 h,反应转速150 r/min;二次酶解的最优工艺条件是酶用量60 U/g,反应温度50℃,反应时间24 h;多孔马铃薯淀粉的最大吸油率可达97%。

The potato porous starches are prepared by usingα-amylase hydrolysis (two times) on potato starch. The effects of reaction condition, such as enzyme activity, temperature, time and the rotate rate, on the products yield and oil absorption of potato porous starches are researched. Using oil absorption rate as the evaluation index, the optimal preparation condition of potato porous starches is confirmed. The first type hydrolysis reaction condition is as follows: enzyme activity 150 U/g, reaction temperature 50℃, reaction time 16 h, rotating speed 150 r/min. The secondary hydrolysis of the optimum condition is as follows: enzyme activity 60 U/g, reaction temperature 50 ℃, reaction times 24 h. The optimal oil absorption of potato porous starch is 97%.
