以诺维信复合蛋白酶酶解海参获得的海参肽为原料,研制一种海参肽果汁复合饮料。对海参肽制备工艺和海参肽果汁复合饮料制备工艺进行了详细研究。结果表明,海参肽的最佳制备工艺条件为:在pH为6、酶解5 h、温度为40℃以及加入重量百分比为0.5%诺维信复合蛋白酶条件下进行酶解溶于40 m L水的2 g海参粉。由感官评价得到的海参肽果汁复合饮料的最佳配比为:蜂蜜4.5g,柠檬汁3.0mL,海参肽粉0.03 g,蓝莓果汁:红提果汁比例为1∶3。制得的海参肽果汁复合饮料呈深蓝色、酸甜适中、有浓郁的水果清香。

Sea cucumber peptides and juice compound beverage ,mainly prepared from hydrolyzed sea cucumber by Novozymes protamex . The preparations of sea cucumber peptides and the compound beverage were researched in detail .The results showed that :the optimum preparation conditions of sea cucumber peptides were :pH was 6 ,the enzymatic hydrolysis time was 5 h ,the enzymatic hydrol-ysis temperature was 40 ℃ ,the proportion of Novozymes protamex was 0 .5% .Through sense evalu-ation ,the optimum formula of sea cucumber peptides and juice compound beverage was defined :honey 4 .5 g ,lemon juice 3 .0 mL ,sea cucumber peptides 0 .03 g ,the ratio of blueberry juice and red grape juice 1 :3 .As a result ,the compound beverage appeared deep blue and suitable sweet -sour of fruit flavor .
