为了研究“红花末”色素的理化特性及食用安全性,采用光谱法分析其吸收图谱及光稳定性和热稳定性,并利用小鼠急性毒性试验、小鼠精子畸变试验等方法进行毒理学研究.结果表明,“红花末”色素溶液在200~800 nm有5个吸收峰,可见区最大吸收峰为540 nm.色素光稳定性较差,热稳定性较好.急性毒性试验表明,“红花末”色素对小鼠的LD50值为1259 mg/kg·bw,属于低毒级;遗传毒性试验表明:小鼠精子畸变率为8.38%~12.26%,明显高于对照组(0.54%,p<0.05).“红花末”色素稳定性较好,属于低毒级,具有一定的致突变性,长期食用可能会对生殖系统产生一定的影响.

In order to study the physicochemical properties and safety of“Honghuamo”red pigment, the absorption spectrum and stability were investigated by means of electronic spectroscopy, and toxicological safety was examined by acute toxicity and sperm shape abnormality test in rats. Results indicated that“Hong-huamo”red pigment showed 5 absorption peaks at 200~800 nm, and the absorption peak was 540 nm at visi-ble region. Light was a significant factor on the stability of“Honghuamo”red pigment, whereas heating treat-ment had little influence on the stability of“Yan mi”red pigment. Results of acute toxicity showed LD50 of“Honghuamo”red pigment in rats was about 1 259 mg/kg·bw, which was of low toxicology. Feeding acute dos-es of “Honghuamo” red pigment to adult rats produced significantly more sperm shape abnormally test (8.38%~12.26%) compared to control rats (0.54%, p<0.05). These results clearly showed that“Hong-huamo” red pigment had good stability under examined conditions. Acute and sub-acute toxicity studies showed that “Honghuamo” red pigment, which was of low toxicology, produced some toxic effects in rats, and it might influence the human reproductive system.
