发酵工程实验是一门实践性、应用性课程，这门课程的讲授目的应该是为社会培养具有独立分析问题、解决问题能力的专业人才。文中在分析发酵实验现有问题的基础上，提出发酵相关实验的教学改革：以社会需求为目标，发挥学生学习积极性，调整发酵实验项目和实践体系，改进课程成绩评定方式等。

The experiment of fermentation engineering is a course with practical application. The purpose of this course is to train professionals with the abilities of independently analyzing and solving problems. The teaching reform was put forward on the base of analyzing the existing problems on the experiment of fer-mentation, such as taking the social demand as the goal, giving full play to students' initiative, adjusting the fermentation experi-ment project and practice system,and improving the curriculum evaluation,etc.
