正确认识和解决水产品中内源性甲醛问题,对于保持水产品的品质和提高水产品安全具有重要意义。本文综述了甲醛的危害、内源性甲醛产生的机理、检测方法以及国内外对水产品中内源性甲醛控制技术,并对水产品中内源性甲醛研究进行了展望,为水产品内源性甲醛进一步研究提供一定的思路和方法。

It is important to understand and solve problem of endogenous formaldehyde in aquatic products, which is also beneficial to maintain quality and improve the safety of aquatic products. Research progress on endogenous formaldehyde in aquatic products was summarized, including the hazards of formaldehyde, the mechanism of endogenous formaldehyde, detection methods of endogenous formaldehyde and control techniques. At the same time we discussed that further research ideas of endogenous formaldehyde. It provides some ideas and methods for further studying endogenous formaldehyde in aquatic products.
