以油茶茶枯为研究对象,在碱溶酸沉方法基础上,对提取蛋白质的工艺进行改良。在料液比1∶20,碱提pH值11的条件下,以超声功率、提取时间、提取温度为单因素进行设计试验,确定茶枯蛋白质提取的最佳工艺参数。试验结果表明,超声功率800 W,提取时间60 min,提取温度40℃的条件下提取,在pH值为3.6的条件下沉淀,茶枯蛋白质提取率可达53.6%。

Taking Camellia oleifera seed meal as material, the extraction process of protein is reformed based on alkali extraction and acid precipitation method. On the conditions of solid-liquid ratio 1∶20 and pH value 11, the ultrasonic power, extracting time and extraction temperature are single factors to design test, in order to determine the optimum process parameters of protein extraction from Camellia oleifera seed meal. The results show that the extraction conditions are ultrasonic power 800 W, time 60 min, temperature 40 ℃, and precipitation of the pH value 3.6, the tea protein extraction rate can reach 53.6%.
