Hypobaric%Toona sinensis%Storage quality
为探讨减压处理对香椿贮藏品质的影响,以红油香椿芽为材料,采用2种不同的减压处理( A:20 kPa;B:20 kPa→常压→60 kPa)进行贮藏,探讨其对香椿芽呼吸强度、外观及内在品质指标的影响。结果表明,与对照(常压处理)相比,减压处理A、B均能有效抑制香椿呼吸强度,延迟香椿芽呼吸高峰的出现,且峰值分别比对照降低16.80%和51.85%;12 d的贮藏期内,减压处理A、B极显著降低了香椿的脱叶率、腐烂率及失重率,其中脱叶率分别降低8.01,11.22个百分点,腐烂率分别降低4.58,5.64个百分点,失重率分别降低4.39,4.87个百分点;12 d的贮藏期内,减压处理A、B显著降低了香椿维生素C和叶绿素的损失率,其中维生素C损失率分别降低15.63,31.25个百分点,叶绿素损失率分别降低8.42,17.72个百分点;12 d的贮藏期内,减压处理A、B平均PPO酶活分别显著降低9.43%,17.87%。总之,减压处理可有效保持香椿采后贮藏品质,减压处理B保鲜效果最好。

To study on effect of hypobaric treatments on storage quality of Toona sinensis,this paper analyzed the changes of respiration rate ,apparent and internal quality of Toona sinensis sprout which treated with hypobaric treatments ( A:Sealed storage under 20 kPa;B:20 kPa→atmospheric pressure→60 kPa ) .The results showed that both A and B treatment delayed the appearance of respiratory peak , inhibited the respiratory intensity of Toona sinensis effectively by 16 .80%and 51 .85%than control .Both A and B treatment reduced the defoliation rate ,rot-ting rate and weight loss rate of Toona sinensis significantly,defoliation rate were decreased by 8.01 and 11.22 per-centage points ,rotting rate were decreased by 4 .58 and 5 .64 percentage points ,weight loss rate were decreased by 4.39 and 4.87 percentage points,respectively.Decompression treatments were significantly effective in reducing corrosion of vitamin C and chlorophyll , vitamin C loss rate of A and B treatment were decreased by 15 .63 and 31.25 percentage points respectively than control ,while chlorophyll loss rate were decreased by 8.4 and 17.72 per-centage points.The average PPO activity of A and B were significantly decreased by 9.43%and 17.87%respec-tively during the whole storage period .Therefore ,considering respiration rate ,apparent and internal quality compre-hensively ,group B that hypobaric storage in stage was the best .
