为满足市场需要,缩短毛木耳的生产周期,采用单因子试验和正交试验对毛木耳988菌种液体发酵培养基中碳、氮源的种类及浓度和发酵条件进行优化。结果表明:毛木耳液体发酵培养基的最佳组成为马铃薯20%,蔗糖2%,玉米粉1.5%,蛋白胨0.6%,KH2 PO40.1%,MgSO4·7H 2 O 0.02%;最佳发酵培养条件为装液量90 mL/250mL,摇床转速160 r/min,此时可获最大菌丝球平均干重,得率达1.5173 g/100mL。

In order to meet the needs of the market and shorten the production cycle of A.polytricha, the liquid fermentation medium including the kinds and concentrations of carbon and nitrogen source,and fermentation conditions of A.polytricha 988 was studied through the single factor experiment and orthogonal experiment design.Results:The best liquid fermentation medium components included 20%potato,2% sucrose,1.5% corn flour,0.6% peptone,0.1% KH2 PO4 ,0.02% MgSO4 7H 2 O;The best culture conditions was as follows:the volume of liquid ratio 90 mL/250mL,the shaking speed 160 r/min. Under these conditions,the maximum average dry weight of mycelium could be got,the yield might be up to 1.5173 g/ 100 mL.
