为研制口味独特、营养丰富山楂枸杞乳复合饮料,采用正交试验设计优选该饮品的组方。结果表明:山楂枸杞乳复合饮料的最佳配方为山楂汁添加80 mL,枸杞汁添加40 mL,乳汁添加量0 mL,水添加40 mL,白砂糖添加6%,柠檬酸添加0.06%,在该条件下加工的山楂枸杞乳复合乳的感官得分为92.9分。

To explore the optimal technique for compound beverage made up of hawthorn,Chinese wolfberry and milk,the formula of the drink were determined by orthogonal test design in the paper.The results showed that the optimal formula of the compound beverage were that the amount of hawthorn juice was 80mL,Chinese Wolfberry juice was 40 mL,milk juice was 40mL,water was 40mL,amount of sucrose was 6% and amount of citric acid was 0.06%.The compound beverage prepared in the optimal condition exhibited light red color,uniform,unique flavor and plentiful nutrition components.
