为探明适宜平菇安全无毒的保鲜方法,以平菇为试材,采用不同浓度的 Nisin 溶液对平菇进行处理,置于低温下(3℃)贮藏,研究天然生物保鲜剂 Nisin 对平菇贮藏品质的影响。结果表明:贮藏15 d 后,0.4 g/LNisin 处理的平菇失重率、多酚氧化酶活性、丙二醛含量分别低于对照1.22%、7.92 U/(min·g)、0.012μmol/g,保持了平菇的可溶性固形物含量和感官品质,从而延缓了平菇的衰老。

위탐명괄의평고안전무독적보선방법,이평고위시재,채용불동농도적 Nisin 용액대평고진행처리,치우저온하(3℃)저장,연구천연생물보선제 Nisin 대평고저장품질적영향。결과표명:저장15 d 후,0.4 g/LNisin 처리적평고실중솔、다분양화매활성、병이철함량분별저우대조1.22%、7.92 U/(min·g)、0.012μmol/g,보지료평고적가용성고형물함량화감관품질,종이연완료평고적쇠로。
In order to explore a safe and nontoxic fresh-keeping method,P .ostreatus was treated with different concentrations of Nisin solution and then stored at 3℃ temperature,then the effects of natural biological preservative Nisin on storage quality of P .ostreatus.The results showed that the weightlessness rate,polyphenol oxidase activity and malondialdehyde content treated by 0.4 g/L Nisin were lower than the control group by 1.22% ,7.92 U/(min g)and 0.012 μmol/g respectively.Maintained a relatively high total solid substance content and sensory quality after stored for 15 d,and then prolonged the storage period of P .ostreatus.
