为了给萝卜的品质育种和栽培利用提供依据,测定了水仙青、德日2号、791和地黄缨等10个萝卜品种肉质根和不同部位的可溶性糖、可溶性蛋白质及 VC含量,并采用隶属函数法对其营养价值进行综合评价。结果表明:1)在10个萝卜品种肉质根中,以北京甜脆的可溶性糖和可溶性蛋白质含量最高,分别为2.4926%和5.2875 mg/g;春翡翠的可溶性糖含量最低,为1.3014%;水仙青的可溶性蛋白质含量最低,为2.4381 mg/g;新科791的 VC含量最高,为0.7141 mg/g,德日2号的 VC含量最低,为0.3899 mg/g。2)10个萝卜品种的营养成分含量不同,其营养价值的隶属函数平均值以潍县萝卜最高,为0.80,其营养综合性状最好;791和北京甜脆居第2和第3,分别为0.79和0.78;水仙青最低,为0.23。因此,潍县萝卜、791和北京甜脆3个萝卜品种的综合营养价值较高、口感较好,可作为生食萝卜资源材料进行品种选育。
為瞭給蘿蔔的品質育種和栽培利用提供依據,測定瞭水仙青、德日2號、791和地黃纓等10箇蘿蔔品種肉質根和不同部位的可溶性糖、可溶性蛋白質及 VC含量,併採用隸屬函數法對其營養價值進行綜閤評價。結果錶明:1)在10箇蘿蔔品種肉質根中,以北京甜脆的可溶性糖和可溶性蛋白質含量最高,分彆為2.4926%和5.2875 mg/g;春翡翠的可溶性糖含量最低,為1.3014%;水仙青的可溶性蛋白質含量最低,為2.4381 mg/g;新科791的 VC含量最高,為0.7141 mg/g,德日2號的 VC含量最低,為0.3899 mg/g。2)10箇蘿蔔品種的營養成分含量不同,其營養價值的隸屬函數平均值以濰縣蘿蔔最高,為0.80,其營養綜閤性狀最好;791和北京甜脆居第2和第3,分彆為0.79和0.78;水仙青最低,為0.23。因此,濰縣蘿蔔、791和北京甜脆3箇蘿蔔品種的綜閤營養價值較高、口感較好,可作為生食蘿蔔資源材料進行品種選育。

The soluble sugar,soluble protein and VC content of fleshy root and different parts of ten radish varieties were determined and then the nutritive values were comprehensively evaluated by membership function to method provide the basis for radish quality breeding and cultivation.2.4926%soluble sugar and 5.2875 mg/g soluble protein content in fleshy root of Beijingtiancui was the maximum. 1.301 4% soluble sugar content in fleshy root of Chunfeicui was the minimum.2.4381 mg/g soluble protein content in fleshy root of Shuixianqing was the minimum also.0.7141 mg/g VC content in fleshy root of Xinke 791 was the maximum but 0.3899 mg/g VC content in fleshy root of Deri 2 was the minimum. There was difference in content of different nutrient component in different parts of ten radish varieties and the average membership function value of Weixianluobu was the maximum (0.80),followed by 791 (0.79) and Beihingtiancui (0.78).In conclusion,Weixianluobu,791 and Beijingtiancui varieties with higher comprehensive nutritive value and good taste can be used as resources in breeding of uncooked food radish variety.
