为了解茶油贮藏品质,该文以过氧化值、酸价、TBA、K232、K270等为指标,研究了光照条件、包装容器材料对茶油贮藏过程中品质的影响。结果表明:不同光照对茶油的品质有显著影响,避光条件下贮藏的茶油各项质量指标均优于自然光和日光灯下贮藏的茶油。避光条件下,PET、PP、玻璃3种容器材料盛装的茶油,以玻璃瓶其品质最好,贮藏75 d,其过氧化值、酸价、TBA、K232和K270分别为13.29 mmol/kg、0.62 mg/g、0.664 mg/kg、2.47和0.3,与初始值相比,增幅均小于其余2种容器材料。说明茶油适宜采用玻璃容器盛装,并在避光下贮藏。通过主成分分析法研究了茶油品质指标对贮藏稳定性的相对重要性,结果表明:K232、TBA、过氧化值影响较大,可以解释茶油贮藏过程中79.85%的品质变化。

The effect of light and package materials on Camellia oil was analyzed in order to evaluate the storage quality of Camellia oil. The following parameters were determined after 75 days of storage:peroxide value,acidity,absorption coefficients K270 and K230 and TBA value. The results showed a gradual loss of quality during storage,especially under nature light and fluorescent lamp;the effects of container type(PET、PP and glass)on the quality of Camellia oil in dark condition were studied, showing that glass was the best packaging material for Camellia oil,at the end of storage,the peroxide value,acidity,TBA value,K232 value and K270 value reached 13.29 mmol/kg,0.62 mg/g,0.664 mg/kg, 2.47 and 0.3,respectively. Compared to initial value,the increase amplitude were lower that of the two packaging materials. Camellia oil had the best quality stored in the glass container avoiding light. Principal component analysis was used to study the effect of quality Index on storage stability,the results showed that K232,TBA value and peroxide value accounted for 79.85%of total variances.
