目的:研究复合保鲜剂对南美白对虾的保鲜作用,避免其腐败变质,从而延长其货架期。方法利用不同配比的纳米TiO2/壳聚糖保鲜剂、溶菌酶、蜂胶醇提液复配保鲜剂进行L9(3)4正交试验,通过pH值、感官评分、挥发性盐基氮(TVB-N)、菌落总数指标的测定,对 L9(3)4正交试验结果进行方差分析,筛选保鲜剂最佳组合。结果采用0.05%纳米 TiO2/1.5%壳聚糖、0.065%溶菌酶、0.7%蜂胶进行复配,南美白对虾的保鲜效果较好。结论复合生物保鲜剂对南美白对虾具有一定的保鲜效果,能使南美白对虾(4±1)℃冷藏条件下的货架期达到8~9d。

목적:연구복합보선제대남미백대하적보선작용,피면기부패변질,종이연장기화가기。방법이용불동배비적납미TiO2/각취당보선제、용균매、봉효순제액복배보선제진행L9(3)4정교시험,통과pH치、감관평분、휘발성염기담(TVB-N)、균락총수지표적측정,대 L9(3)4정교시험결과진행방차분석,사선보선제최가조합。결과채용0.05%납미 TiO2/1.5%각취당、0.065%용균매、0.7%봉효진행복배,남미백대하적보선효과교호。결론복합생물보선제대남미백대하구유일정적보선효과,능사남미백대하(4±1)℃랭장조건하적화가기체도8~9d。
Objective To investigate the preservation effect of complex biological preservative on Pe-naeus vannamei, so as to avoid spoilage, and prolong its shelf-life. Methods The L9(3)4 orthogonal experi-ment was carried out using different proportions of nano-TiO2/chitosan preservative, lysozyme and propolis ex-tract complex preservative agent. L9(3)4 orthogonal variance test results were analyzed by pH, sensory evalua-tion, volatile basic nitrogen (TVB-N), and the total number of colonies determination. The best combination of preservative was selected. Results The compound biological preservative integrated with 0.05% na-no-TiO2/1.5%chitosan composite, 0.065%lysozyme, 0.7%alcohol extraction liquid of propolis could prolong the shelf life of Penaeus vannamei. Conclusion Complex biological preservative had preservation effect on Penaeus vannamei, it could prolong the shelf life to 8~9 days under refrigerated conditions at (4±1)℃.
