为确保大蒜粉中沙门氏菌的正确检出，以40目和80目两种大蒜粉为原料，研究两种前增菌液和两种检测方法对其检测结果的影响。研究发现：采用含0.5%亚硫酸钾的 TSB 作为前增菌液，其检测的灵敏度都可达到10 cfu的菌含量，蒜粉的目数不会影响其灵敏度，在一次增菌过程中，传统平板法的灵敏度高于常规PCR快速检测方法，二次选择增菌过程两种方法没有差别。在实际检测过程中，应取用二次增菌液进行相应的检测，否则常规PCR快速检测方法会出现假阴性的结果。

In order to detect Salmonella in garlic powder correctly,the effects of two pre-enrichment liquid and two detection methods are investigated on the detection results using garlic powder of 40 mesh and 80 mesh.It is found that the detection sensitivity can be 10 cfu Salmonella using the pre-en-richment liquid of TSB with 0.5% K2 SO3 and can't be affected by the mesh number of garlic powder. The traditional plate method is more sensitive than the PCR rapid detection method using the pre-en-richment liquid and the two methods have no difference using the second selective enrichment liquid. In the process of actual detection,the second selective enrichment liquid should be adopted;otherwise the PCR rapid detection method would show false negative result.
