以南美白对虾虾头为研究对象,采用单因素和正交实验确定虾头油提取的最优条件;同时对虾头中蛋白质和含水量对虾头油提取的影响进行对比研究。结果表明:异丙醇为提取剂,虾头含水量15%,提取时间为110 min,提取温度为70℃,料液比为1∶7(m∶V)。在此条件下可得到最大虾油得率为7.89%。同时脱蛋白,虾油的得率更高,达到8.00%。

The oils are extracted by solvent from Penaeus vannamei heads.The optimal extraction conditions are determined by using single factor and orthogonal experiments.At the same time,the influence of protein and water content to extraction of oils from Penaeus vannamei heads are studied. The results show that the isopropyl alcohol is as extracting agent,the water content in Penaeus van-namei heads is 15%,the extraction temperature is 70 ℃,the ratio of solid to liquid is 1∶7(m∶V), the extraction time is 110 min.The Penaeusvannamei oils can be obtained at a rate of 7.89% under such conditions.The yield of Penaeus vannamei oils is 8.00% by removing protein.
