了解绿色脱水蔬菜的铜含量。采用GB/T5009.13-2003《食品中铜的测定》第一法原子吸收光谱法检测来自生产厂家的脱水豆角样品30个和来自市场的新鲜豆角和茄子样品4个,通过对检测结果的分析和评价,探讨绿色脱水蔬菜的铜限量。有5个脱水豆角样品铜含量达到超过100 mg/kg(确认为人为添加),最高为1944 mg/kg,平均值160 mg/kg,如去掉5个最高含量,平均含量为13 mg/kg,标准差为7 mg/kg,期间从市场买到的鲜豆角和鲜茄子的铜含量(以干基计)9 mg/kg~16 mg/kg。认为有必要制定绿色脱水蔬菜铜限量标准,推荐绿色脱水蔬菜铜限量为50 mg/kg。

Learn about the copper content of green dehydrated vegetables. Determined 30 samples of dehydrated bean from the factory and 4 samples of fresh beans and eggplant from the market, used GB/T5009.13-2003 determination of copper in food, atomic absorption spectrometry (AAS). Discussed about limited amount of copper on the green dehydrated vegetable through analyzing and evaluating the results. There were 5 dehydrated beans samples copper content reached more than 100 mg/kg (Confirmed to artificially add) ,the maximum was 1 944 mg/kg and the average was 160 mg/kg , but the average is 13 mg/kg , the SD was 7 mg/kg without the 5 highest,while the samples which in the fresh beans and eggplant from the market was 9 mg/kg-16 mg/kg (dried bases). It is necessary to develop the Limited Amount copper standard on the green dehydrated vegetables , and suggested that the limited amount of copper on the green dehydrated vegetable should 50 mg/kg.
