本文研究了低温下红提葡萄SO2熏蒸的伤害阈值及SO2伤害对葡萄果皮结构的影响。结果表明,SO2主要通过果梗和果刷进入果实内,且0℃下SO2伤害阈值为600μL/L×2.0h、400μL/L×4.0h和300μL/L×6.0h,SO2破坏果皮表面蜡质层,伤害表皮细胞,引起果皮表面漂白伤害。

In this paper, the SO2 fumigation damage threshold and SO2 injury effect on the structure of the grape pericarp under low temperature were studied. The results showed that SO2 entered the fruit mainly through stem and brush, threshold of SO2 injury were 600μL/Lí2.0h, 400μL/Lí2.0h and 300μL/Lí6.0h under low temperature. SO2 could damage skin surface wax layer and skin cells of red grape, and cause the pericarp surface bleaching.
