白酒生产与气候环境条件密切相关,优越的气候环境条件是生产优质白酒的重要因素之一。本文拟从比较山东省威海市与中国浓香型白酒主产地--宜宾、泸州在气候环境条件方面的差异入手,探讨在威海市生产优质浓香型白酒的优势条件和不利条件,以及应采取的对策措施。将收集的3个城市多年的气象数据进行比较分析显示,威海市的全年气温低,大气湿度低,在白酒主产季10月至翌年5月,气温和大气湿度均显著低于宜宾、泸州,在白酒度夏季6月至9月,气温、大气湿度与宜宾、泸州差异小,气温与该季的入窖温度接近。因此,在威海生产浓香型白酒时,在白酒度夏季应适当降低粮醅温度,而在白酒主产季应适当提高粮醅温度和车间空气湿度,具体提高或降低数值依据实验确定。

Liquor production is closely related with climate environment. Favourable climate is one important factor for producing high quality liquor. This paper utilized the multi-years climate data to study the similarities and dif-ferences of the climate conditions in Weihai of Shangdong Province and Yibin, Luzhou in Sichuan Province to find the favourable and unfavourable climate conditions in Weihai city for producing high quality Luzhou-flavour liquor. The comparison results show that the year round temperature and humidity are lower in Weihai than those in Yib-in and Luzhou. During the major liquor production period from October to next May, the temperature and humidity in Weihai are notably lower than those in Yibin and Luzhou. During the summer period from June to September, the temperature and humidity in Weihai only show a small difference from those in Luzhou, Yibin. The tempera-ture in Weihai during the summer period is close to the inlet temperature of the distilled grain in the pit. Thus , in Weihai, the temperature of distilled grain during the summer period should be lowered in order to produce high quality liquor, while the temperature of distilled grain and the humidity in the workshop during the major liquor production period should be raised. How much to raise and lower should be determined by experiment.
