This paper studies the relationship between spectrophotometer method and Lovibond color indicator,then,identified the advantages of spectrophotometer method. Take value of Lovibond red and absorbance value in a specific wavelength of six different levels of bleaching sesame oil for regression analysis.The result showed that there is a linear relationship between the absorbing value at 535nm of Lovibond red's absorbing wavelength and the value of Lovibond red. The regressive coefficient is 0.986. With the decline in value of Lovibond red,the absorbance value is also decreased. The spectrophotometry was able to detect subtle gaps,and those gaps is that Lovibond can not identify. So, this is a very good method to determine the depth of color,in order to find the most suitable conditions for bleaching.
